This is a custom designed 8.5" 215mm VG-10 Gyuto Kiritsuke Hammer Finish Chef's Knife with stabilized wood handle. At a thickness of 58mm (2.5"), the blade was designed at the preferred width of the majority of professional chefs. This top-tier knife is crafted from the industry gold-standard 67 layer Damascus VG-10 steel, and comes with a HRC rating of 60-62. This incredible sharpness means not only will the blade perform well out of the box, but it will stay sharper much longer (up to 10x) than the average kitchen knife.

*Please do not confuse our VG10 damascus chef knives with regular carbon damascus knives purchased abroad.
